Posted on August 30, 2024

Pickled Taco Vegetables are a zesty and tangy addition to tacos, burritos, or as a side for your favorite Mexican dishes. This quick pickle recipe brings out the best in fresh vegetables, adding a bright, crunchy contrast to rich and savory flavors.

Ingredients:

  • 1 cup carrots, thinly sliced into rounds
  • 1 cup red onions, thinly sliced
  • 1 cup radishes, thinly sliced
  • 1 cup cucumbers, thinly sliced
  • 1-2 jalapeños, thinly sliced (optional, for heat)
  • 2 cloves garlic, thinly sliced
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon cumin seeds
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Fresh cilantro or parsley (optional, for garnish)

Instructions:

1. Prepare the Vegetables:

  • Wash and thinly slice all the vegetables and jalapeños (if using).
  • Place the sliced vegetables into a large glass jar or a heatproof container with a lid.

2. Make the Pickling Brine:

  • In a medium saucepan, combine the vinegar, water, sugar, salt, black peppercorns, cumin seeds, oregano, and bay leaf.
  • Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and salt.

3. Pickle the Vegetables:

  • Pour the hot pickling brine over the sliced vegetables in the jar, making sure they are fully submerged in the liquid.
  • Let the jar cool to room temperature. Once cooled, seal the jar with a lid and refrigerate for at least 2 hours before serving. For best flavor, let the vegetables pickle for at least 24 hours.

4. Serve:

  • Serve the pickled vegetables as a topping for tacos, burritos, or any Mexican-inspired dishes.
  • Garnish with fresh cilantro or parsley if desired.

Tips:

  • Storage: Store the pickled vegetables in the refrigerator for up to 2 weeks.
  • Vegetable Variations: Feel free to add other vegetables like cauliflower, bell peppers, or even green beans.
  • Spice Level: Adjust the number of jalapeños to control the heat level, or omit them if you prefer a milder flavor.

These Pickled Taco Vegetables are an easy and delicious way to add a burst of flavor to your meals. Their tangy, crisp taste pairs perfectly with the richness of tacos and other Mexican dishes!
