Here’s a simple and delicious recipe to make your own Pineapple Paradise Cake:

Ingredients:

For the Cake:

  • 1 box yellow cake mix (or you can use a homemade yellow cake recipe)
  • 1 can (15 oz) crushed pineapple, with juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/2 cup shredded coconut (optional for added texture)
  • 1/2 cup chopped walnuts or pecans (optional)

For the Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp pineapple juice (from the can of pineapple)

For Topping (optional):

  • Extra shredded coconut (toasted or plain)
  • Chopped pineapple or maraschino cherries for decoration

Instructions:

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13-inch baking pan.
  • In a large mixing bowl, combine the cake mix, crushed pineapple (with juice), vegetable oil, eggs, shredded coconut, and chopped nuts (if using).
  • Stir everything together until fully combined, making sure the ingredients are well incorporated.
  • Pour the batter into the prepared baking pan and spread it out evenly.

2. Bake the Cake:

  • Bake the cake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once done, remove the cake from the oven and allow it to cool completely in the pan.

3. Make the Frosting:

  • While the cake is cooling, prepare the frosting. In a medium-sized bowl, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar and continue mixing until smooth.
  • Add the vanilla extract and 2 tablespoons of pineapple juice. If you prefer a thinner consistency, you can add more pineapple juice, one tablespoon at a time, until you reach your desired texture.

4. Frost the Cake:

  • Once the cake is completely cooled, spread the cream cheese frosting evenly over the top of the cake.
  • If you like, sprinkle extra shredded coconut on top of the frosting or toast the coconut for a golden finish.

5. Decorate (optional):

  • For extra flair, you can add fresh pineapple chunks or maraschino cherries on top of the cake.
  • Alternatively, top with chopped walnuts or pecans for a bit of crunch.

6. Serve:

  • Slice and serve chilled or at room temperature. The cake is even better after it sits for a few hours, as the flavors meld together!
