For the topping:

  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 can (20 oz) pineapple slices in juice, drained
  • Maraschino cherries

For the cake batter:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions:

  1. Prepare the Topping:
    • Preheat your oven to 350°F (175°C). Grease a bundt cake pan generously.
    • Melt the butter and pour it into the bottom of the prepared bundt pan.
    • Sprinkle the brown sugar evenly over the melted butter.
    • Arrange the pineapple slices on top of the brown sugar-butter mixture in the pan, placing cherries in the centers of the pineapple slices. Set aside.
  2. Make the Cake Batter:
    • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In another mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the eggs, one at a time, and then add the vanilla extract.
  3. Combine Wet and Dry Ingredients:
    • Gradually add the flour mixture to the creamed mixture, alternating with buttermilk, beginning and ending with the flour mixture. Mix until just combined; do not overmix.
  4. Assemble the Cake:
    • Carefully spoon the cake batter over the arranged pineapple slices and spread it evenly in the pan.
  5. Bake:
    • Place the bundt pan in the preheated oven and bake for approximately 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Cool and Serve:
    • Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes.
    • Place a serving plate or cake stand over the top of the pan, then carefully invert the cake onto the plate. Be cautious as the pan will still be hot.
    • Allow the cake to cool completely before slicing and serving.
