Pork Chops with Scalloped Potatoes Recipe

Ingredients:

  • 4 bone-in pork chops
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 4 medium potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups shredded cheese (cheddar, Gruyere, or your choice)
  • 2 cups heavy cream or half-and-half
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Chopped fresh parsley (for garnish, optional)

Instructions:

  1. Preheat oven: Preheat your oven to 375°F (190°C).
  2. Prepare the pork chops: Pat dry the pork chops and season both sides generously with salt and black pepper.
  3. Brown the pork chops: In an ovenproof skillet or frying pan, heat the olive oil over medium-high heat. Add the pork chops and sear them for about 3-4 minutes on each side until they get a golden-brown crust. Once browned, remove the pork chops from the skillet and set them aside.
  4. Prepare the scalloped potatoes: In the same skillet, add a touch more oil if needed. Layer half of the sliced potatoes and onions in the skillet. Sprinkle half of the minced garlic, thyme, and paprika over the potatoes. Season with salt and pepper. Spread half of the shredded cheese over the potatoes.
  5. Repeat the layers: Create another layer with the remaining potatoes, onions, garlic, thyme, paprika, and cheese.
  6. Add the cream: Pour the heavy cream over the layered potatoes in the skillet, allowing it to seep through the layers.
  7. Cook on stovetop: Place the skillet back on the stovetop over medium heat and bring the cream to a gentle simmer. Let it cook for about 5 minutes, allowing the potatoes to slightly soften.
  8. Bake in the oven: Return the seared pork chops to the skillet, nestling them into the potato mixture. Transfer the skillet to the preheated oven and bake for 30-35 minutes or until the pork is cooked through and the potatoes are tender.
  9. Garnish and serve: Once done, garnish with chopped fresh parsley if desired and serve the pork chops with the creamy, cheesy scalloped potatoes.
