Potato chicken cheese balls are a delicious and savory snack or appetizer that combines seasoned ground chicken, mashed potatoes, and cheese, rolled into balls and deep-fried until golden brown and crispy. Here’s a simple recipe for making potato chicken cheese balls:

Ingredients:

  • 2 cups mashed potatoes (about 4 medium potatoes, boiled and mashed)
  • 1 cup cooked chicken, finely chopped or shredded
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried mixed herbs (such as Italian seasoning)
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • Oil for deep-frying

Instructions:

  1. Prepare the Potato Mixture:
    • In a large mixing bowl, combine the mashed potatoes, cooked chicken, shredded cheese, chopped onion, minced garlic, dried herbs, salt, and pepper. Mix until well combined.
  2. Shape the Balls:
    • Scoop out a portion of the potato mixture and shape it into a small ball, about 1 to 1.5 inches in diameter. Repeat with the remaining mixture, shaping it into balls.
  3. Coat the Balls:
    • In one shallow bowl, place the beaten eggs. In another shallow bowl, place the breadcrumbs.
    • Dip each potato chicken cheese ball into the beaten eggs, coating it evenly.
    • Then, roll the ball in the breadcrumbs until it is well coated. Repeat with all the balls.
  4. Chill the Balls (Optional):
    • Place the coated balls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes. Chilling helps the balls hold their shape better during frying.
  5. Fry the Balls:
    • In a deep fryer or heavy-bottomed pot, heat oil to 350°F (175°C).
    • Carefully add the coated potato chicken cheese balls to the hot oil in batches, without overcrowding the fryer. Fry for about 3-4 minutes, or until they are golden brown and crispy.
  6. Drain and Serve:
    • Use a slotted spoon to remove the fried potato chicken cheese balls from the oil and transfer them to a plate lined with paper towels to drain excess oil.
  7. Serve Warm:
    • Serve the potato chicken cheese balls warm, either on their own or with your favorite dipping sauce, such as marinara sauce, ranch dressing, or garlic aioli.
