POTATO SANDWICHES

Potato sandwiches are a versatile and delicious option for a meal or snack. Here’s a simple recipe for a classic potato sandwich:

Ingredients:

  • 4 medium-sized potatoes, boiled and mashed
  • 8 slices of bread (white, wheat, or your choice)
  • 1 onion, finely chopped
  • 1-2 green chilies, finely chopped (adjust to your spice preference)
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • Salt to taste
  • Fresh coriander leaves (cilantro), chopped
  • Butter or oil for toasting

Instructions:

  1. Prepare the Potato Filling:
    • In a pan, heat some oil or butter over medium heat. Add cumin seeds and let them splutter.
    • Add the chopped onions and sauté until they turn translucent.
    • Add the grated ginger and green chilies, sautéing for a minute.
    • Add turmeric powder, red chili powder (if using), and salt. Mix well.
    • Add the mashed potatoes and combine everything thoroughly. Cook for a few minutes until the flavors meld together.
    • Stir in chopped fresh coriander leaves and remove the mixture from heat.
  2. Assemble the Sandwiches:
    • Take a slice of bread and spread a generous amount of the prepared potato mixture evenly on it.
    • Place another slice of bread on top to form a sandwich.
  3. Toast the Sandwiches:
    • Heat a pan or griddle over medium heat and add a little butter or oil.
    • Carefully place the assembled sandwiches onto the pan.
    • Toast the sandwiches until both sides turn golden brown and crispy, flipping them halfway through to ensure even toasting.
    • If you have a sandwich maker or toaster, you can use that instead for a quicker and evenly toasted result.
  4. Serve:
    • Once the sandwiches are toasted and crispy, remove them from the pan.
    • Cut each sandwich diagonally into halves or quarters.
    • Serve the delicious potato sandwiches hot with ketchup, chutney, or any sauce of your choice.

These potato sandwiches are flavorful and make for a satisfying meal or snack, perfect for any time of the day! Feel free to customize by adding veggies or spices according to your taste preferences.
