Here’s a quick and healthy recipe that can help support your weight loss goals: Zucchini Noodles with Cherry Tomatoes and Basil. It’s low in calories but high in flavor!

Ingredients:

  • 2 medium zucchinis (for zoodles)
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil leaves, chopped (about 1/4 cup)
  • Optional: Grated Parmesan cheese for serving

Instructions:

  1. Prepare the Zoodles: Use a spiralizer or a vegetable peeler to create zucchini noodles (zoodles). If using a peeler, make long strips and then slice them into noodle-like shapes.
  2. Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add Tomatoes: Add the cherry tomatoes to the skillet. Cook for about 3-4 minutes, until they start to soften.
  4. Cook the Zoodles: Add the zucchini noodles to the skillet and toss everything together. Cook for another 2-3 minutes, just until the zoodles are tender but still slightly crisp.
  5. Season: Season with salt and pepper to taste, and stir in the fresh basil.
  6. Serve: Plate the zucchini noodles and top with grated Parmesan cheese if desired.

Tips:

  • This dish is very versatile—feel free to add other vegetables like bell peppers or spinach.
  • Pair it with a source of protein, like grilled chicken or shrimp, for a more filling meal.
