Recipe for creamy chicken lasagna

Certainly! Here’s a delicious recipe for creamy chicken lasagna:Ingredients:

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and pepper, to taste
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic, dried basil, dried oregano, dried thyme, and red pepper flakes (if using). Cook for an additional 1-2 minutes until fragrant.
  4. Add the diced tomatoes to the skillet and cook for another 2-3 minutes. Season with salt and pepper to taste.
  5. Stir in the cooked chicken, condensed cream of chicken soup, chicken broth, and heavy cream. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  6. Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish. Place 3 lasagna noodles on top of the chicken mixture, overlapping slightly.
  7. Spread a layer of the chicken mixture over the noodles, then sprinkle with shredded mozzarella and grated Parmesan cheese. Repeat the layers until all the ingredients are used, finishing with a layer of cheese on top.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  10. Let the creamy chicken lasagna cool for a few minutes before slicing. Garnish with chopped fresh parsley before serving.
