A Hawaiian-style slow cooker dish typically features flavors like pineapple, soy sauce, garlic, and brown sugar, making it a sweet and savory delight. Here’s a simple recipe for Hawaiian-style slow cooker chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • 1 can (20 oz) pineapple chunks in juice, drained, juice reserved
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced (optional)
  • 1 teaspoon ground ginger or 1 tablespoon fresh grated ginger
  • 1/2 teaspoon black pepper
  • Cooked rice or noodles, for serving
  • Chopped green onions and sesame seeds, for garnish (optional)

Instructions:

  1. Prepare the Sauce:
    • In a bowl, mix together the pineapple juice, soy sauce, brown sugar, ketchup, minced garlic, ground ginger, and black pepper.
  2. Layer the Ingredients:
    • Place the sliced onion and bell pepper (if using) at the bottom of the slow cooker.
    • Lay the chicken breasts or thighs on top of the vegetables.
    • Pour the sauce mixture over the chicken.
  3. Cook:
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  4. Serve:
    • Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to coat with the sauce.
    • Serve over cooked rice or noodles. Garnish with chopped green onions and sesame seeds if desired.
