Red Chile Frito Pie is a popular Tex-Mex dish made by combining chili (often with a red chile base) and Fritos corn chips, then layering the ingredients to create a comforting, hearty meal. It is commonly served as a casserole, topped with cheese, and sometimes accompanied by sour cream or other toppings.

Here’s how to make a delicious Red Chile Frito Pie:

Ingredients:

  • For the chili:
    • 1 lb ground beef (or turkey)
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 can (15 oz) tomato sauce
    • 1 can (10 oz) diced tomatoes (optional)
    • 2 tbsp chili powder
    • 1 tbsp ground cumin
    • 1 tbsp paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp cayenne pepper (optional for heat)
    • Salt and pepper, to taste
    • 1-2 cups red enchilada sauce or red chile sauce (you can use store-bought or homemade)
    • 1/2 cup water or beef broth (optional, for desired consistency)
  • For the Frito Pie:
    • 6-8 cups Fritos corn chips (enough to create a base layer and top)
    • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
    • Optional toppings: sour cream, diced onions, jalapeños, fresh cilantro, or sliced olives

Instructions:

  1. Prepare the chili:
    • In a large skillet or Dutch oven, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat if necessary.
    • Add the chopped onion and minced garlic. Sauté until softened and fragrant, about 3-5 minutes.
    • Stir in the chili powder, cumin, paprika, garlic powder, onion powder, cayenne (if using), salt, and pepper. Mix well to coat the meat and onions in the spices.
    • Pour in the tomato sauce, diced tomatoes (if using), and red enchilada or red chile sauce. Stir to combine. If you prefer a thinner chili, add water or beef broth to achieve the desired consistency.
    • Let the chili simmer over low heat for 15-20 minutes to meld the flavors. Taste and adjust seasoning as needed.
  2. Assemble the Frito Pie:
    • Preheat your oven to 350°F (175°C).
    • In a baking dish (about 9×13 inches), spread a layer of Fritos corn chips at the bottom.
    • Spoon half of the chili mixture over the chips, spreading it evenly.
    • Top with a generous layer of shredded cheese.
    • Add another layer of Fritos, then repeat with the remaining chili and cheese.
  3. Bake:
    • Place the dish in the oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly and the Fritos are slightly crisp.
  4. Serve:
    • Let the Frito pie cool for a few minutes before serving.
    • Garnish with your choice of toppings, such as sour cream, chopped onions, jalapeños, fresh cilantro, or sliced olives.
