Reese’s Bundt Cake

Here’s a recipe for a delicious Reese’s Bundt Cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup strong brewed coffee, cooled to room temperature

For the Filling and Topping:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup chopped Reese’s Peanut Butter Cups (about 10-12 mini cups)
  • 1/2 cup chocolate chips
  • Additional Reese’s Peanut Butter Cups, chopped (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan and set aside.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in the brewed coffee until the batter is smooth and well combined.
  7. In a separate mixing bowl, beat together the creamy peanut butter, powdered sugar, and softened butter until smooth and creamy.
  8. Pour half of the chocolate cake batter into the prepared bundt cake pan. Spoon the peanut butter filling over the batter, spreading it out evenly.
  9. Sprinkle the chopped Reese’s Peanut Butter Cups and chocolate chips over the peanut butter filling.
  10. Pour the remaining chocolate cake batter over the filling and spread it out evenly to cover the filling.
  11. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Remove the cake from the oven and let it cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
  13. Once the cake has cooled, garnish it with additional chopped Reese’s Peanut Butter Cups, if desired.
  14. Slice and serve the Reese’s Bundt Cake and enjoy!
