Roasted leg of lamb with roasted potatoes is a classic and delicious dish, perfect for a special occasion or holiday meal. Here’s a simple recipe to make it:Ingredients:

For the Roasted Leg of Lamb:

  • 1 leg of lamb (about 5-6 pounds), bone-in or boneless
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

For the Roasted Potatoes:

  • 2 pounds potatoes (such as Yukon Gold or Russet), peeled and cut into chunks
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to make a marinade for the leg of lamb.
  3. Rub the marinade all over the leg of lamb, making sure to coat it evenly. Let the lamb marinate for at least 30 minutes at room temperature, or refrigerate it for a few hours to marinate longer.
  4. Place the marinated leg of lamb in a roasting pan or baking dish, fat side up.
  5. In a separate bowl, toss the potato chunks with olive oil, minced garlic, chopped rosemary, salt, and black pepper until well coated.
  6. Arrange the seasoned potatoes around the leg of lamb in the roasting pan.
  7. Roast the leg of lamb and potatoes in the preheated oven for about 1 1/2 to 2 hours, or until the internal temperature of the lamb reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 135-140°F (57-60°C).
  8. Halfway through the cooking time, gently turn the potatoes to ensure even browning.
  9. Once the leg of lamb is cooked to your liking, remove it from the oven and transfer it to a cutting board. Cover the lamb loosely with aluminum foil and let it rest for about 15 minutes before carving.
  10. While the lamb is resting, continue roasting the potatoes until they are golden brown and tender, about 10-15 minutes more.
  11. Carve the rested leg of lamb into slices and serve it with the roasted potatoes on the side.

This dish pairs well with a side of steamed vegetables or a fresh green salad.
