Savory Vegetable and Ham Muffins

Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup (120ml) milk
  • 1/2 cup (120ml) sour cream or Greek yogurt
  • 1/4 cup (60ml) vegetable oil or melted butter
  • 2 large eggs
  • 1 cup (150g) cooked ham, diced
  • 1/2 cup (60g) shredded cheddar cheese (or any cheese you prefer)
  • 1/2 cup (50g) bell pepper, finely chopped
  • 1/2 cup (50g) spinach, chopped
  • 1/4 cup (30g) green onions, sliced
  • 1/4 cup (30g) grated Parmesan cheese (optional)
  • 1/2 teaspoon dried herbs (like oregano, thyme, or parsley)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper muffin liners.
  2. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and onion powder.
  3. Prepare the Wet Ingredients:
    • In another bowl, whisk together the milk, sour cream, oil, and eggs until smooth.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.
  5. Fold in the Fillings:
    • Gently fold in the diced ham, shredded cheddar cheese, bell pepper, spinach, and green onions. You can also add the grated Parmesan cheese and dried herbs at this stage.
  6. Fill the Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake the Muffins:
    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  8. Cool and Serve:
    • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
