Scotch Eggs Recipe
Ingredients:
- 4 large eggs (plus 1 extra egg for coating)
- 1 lb (450g) sausage meat (or 4-5 sausages, casings removed)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground mustard (optional)
- 1/2 tsp smoked paprika (optional)
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs (Panko for extra crunch)

Instructions:
1. Boil the Eggs:
- Place the eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, cook for 4-5 minutes for soft-boiled or 7-8 minutes for hard-boiled.
- Transfer the eggs to a bowl of ice water to stop cooking. Once cool, peel the eggs carefully.
2. Prepare the Sausage Mixture:
- In a bowl, mix the sausage meat with salt, pepper, ground mustard, and smoked paprika until well combined.
3. Assemble the Scotch Eggs:
- Divide the sausage meat into four equal portions.
- Flatten each portion into a thin patty.
- Place a boiled egg in the center of the patty, then gently wrap the sausage meat around the egg, making sure it’s evenly coated and sealed.
4. Coat the Eggs:
- Beat the extra egg in a small bowl.
- Roll each sausage-coated egg in flour, then dip it into the beaten egg, and finally, roll it in breadcrumbs until well coated.
5. Fry the Scotch Eggs:
- Heat the vegetable oil in a deep pan or fryer to 350°F (175°C).
- Carefully lower the Scotch eggs into the hot oil and fry for about 6-8 minutes, turning occasionally, until the sausage is cooked through and the coating is golden brown and crispy.
- Remove from the oil and drain on paper towels.
