Seafood boil baked potato

A seafood boil baked potato combines the flavors of a classic seafood boil with the comfort of a baked potato. Here’s a recipe to make it:Ingredients:

  • 4 large russet potatoes
  • 1 lb shrimp, peeled and deveined
  • 1 lb smoked sausage, sliced
  • 4 ears of corn, husked and cut into thirds
  • 1 lb small red potatoes, halved
  • 1 lb crab legs
  • 1 lemon, cut into wedges
  • Old Bay seasoning, to taste
  • Salt, to taste
  • Butter, for serving
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes clean and pierce them several times with a fork.
  3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
  4. While the potatoes are baking, prepare the seafood boil ingredients. In a large pot, bring water to a boil. Season the water generously with Old Bay seasoning and salt.
  5. Add the sliced smoked sausage and halved red potatoes to the pot and cook for 10 minutes.
  6. Add the corn to the pot and cook for an additional 5 minutes.
  7. Add the shrimp and crab legs to the pot and cook for 3-5 minutes, or until the shrimp are pink and opaque and the crab legs are heated through.
  8. Drain the seafood boil ingredients and transfer them to a large serving platter or bowl.
  9. Once the baked potatoes are done, remove them from the oven and carefully slice each one open lengthwise.
  10. Fluff the insides of the baked potatoes with a fork.
  11. Divide the seafood boil mixture among the baked potatoes, placing a generous amount on top of each one.
  12. Squeeze lemon juice over the top of each seafood-filled potato.
  13. Serve the seafood boil baked potatoes hot, with additional Old Bay seasoning, melted butter, and chopped fresh parsley for garnish if desired.
