SIMPLE ROSEMARY BREAKFAST POTATOES

Posted on September 29, 2023

Certainly! Here’s a simple recipe for rosemary breakfast potatoes:

Ingredients:

  • 4 cups potatoes, diced into small cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon paprika for added flavor
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes: Wash and scrub the potatoes thoroughly. Leave the skin on for added texture and nutrition. Dice the potatoes into small, bite-sized cubes.
  3. Season Potatoes: In a large bowl, toss the diced potatoes with olive oil, dried rosemary, salt, pepper, and paprika if you’re using it. Ensure the potatoes are well-coated with the seasonings.
  4. Spread on Baking Sheet: Spread the seasoned potatoes evenly on a baking sheet. Make sure they are in a single layer to ensure even cooking.
  5. Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes or until the potatoes are golden brown and crispy on the edges. Remember to flip the potatoes halfway through the baking time to ensure even cooking.
  6. Serve: Once the potatoes are done, remove them from the oven. Garnish with fresh parsley if desired. Serve the rosemary breakfast potatoes hot as a delicious side dish for breakfast or brunch.

Feel free to customize this recipe based on your preferences. You can add other seasonings like garlic powder or onion powder for extra flavor. Enjoy your rosemary breakfast potatoes!
