Here’s a simple and delicious recipe for slow cooker pork chops:

Slow Cooker Pork Chops

Ingredients:

  • 4 boneless pork chops, about 1 inch thick
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup honey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions:

  1. Prepare the Pork Chops:
    • Season the pork chops on both sides with salt and pepper.
  2. Sear the Pork Chops:
    • In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear them for 2-3 minutes on each side until they are golden brown. This step adds flavor but can be skipped if you are short on time.
  3. Prepare the Slow Cooker:
    • Place the sliced onions and minced garlic at the bottom of the slow cooker.
  4. Mix the Sauce:
    • In a medium bowl, whisk together the chicken broth, soy sauce, Worcestershire sauce, honey, thyme, rosemary, paprika, garlic powder, and onion powder until well combined.
  5. Cook the Pork Chops:
    • Place the seared pork chops on top of the onions and garlic in the slow cooker. Pour the sauce mixture over the pork chops, ensuring they are well coated.
  6. Slow Cook:
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork chops are tender and cooked through.
  7. Thicken the Sauce:
    • About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the slow cooker, mixing well. Cover and continue cooking on high for an additional 30 minutes, or until the sauce has thickened.
  8. Serve:
    • Serve the pork chops with the thickened sauce over mashed potatoes, rice, or your favorite side dish. Garnish with fresh herbs if desired.

Tips:

  • Searing: Searing the pork chops before adding them to the slow cooker enhances the flavor but can be skipped if you prefer a more hands-off approach.
  • Vegetables: Add some baby carrots or sliced bell peppers to the slow cooker for a complete meal.
  • Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
