Smothered Chicken with Creamed Spinach Bacon And Mushrooms

Smothered chicken with creamed spinach, bacon, and mushrooms is a delicious and comforting dish that’s packed with flavor. Here’s a recipe to make it:Ingredients:

For the chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For the creamed spinach, bacon, and mushrooms:

  • 6 slices bacon, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach leaves, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/4 teaspoon nutmeg (optional)
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  4. Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-6 minutes.
  5. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, or until fragrant.
  6. Stir in the chopped spinach and cook until wilted.
  7. Pour in the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes, stirring occasionally.
  8. Stir in the grated Parmesan cheese until melted and smooth. Season with salt, pepper, and nutmeg, if using.
  9. Return the cooked bacon to the skillet and stir to combine.
  10. Return the cooked chicken breasts to the skillet and spoon the creamed spinach, bacon, and mushrooms over the top.
  11. Reduce the heat to low and let the chicken simmer in the sauce for 2-3 minutes to heat through.
  12. Garnish with chopped fresh parsley, if desired, before serving.
