SOS (aka Creamed Beef)

SOS (Creamed Beef on Toast), also known as “Sh*t on a Shingle,” is a classic comfort food often associated with military cuisine. It’s a creamy, hearty dish that’s simple to make and is served over toast or biscuits.

Ingredients:

  • 1 lb ground beef (you can also use chipped beef)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • Salt and black pepper to taste
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)
  • Toasted bread or biscuits for serving

Instructions:

Step 1: Cook the Ground Beef

  1. In a large skillet over medium heat, brown the ground beef, breaking it up into small crumbles. Cook until it’s no longer pink, then drain any excess grease.

Step 2: Make the Roux

  1. Push the beef to one side of the skillet and add the butter to the empty side. Once the butter is melted, stir in the flour to make a roux.
  2. Cook the roux for about 1-2 minutes, stirring constantly until it turns slightly golden.

Step 3: Add the Milk

  1. Gradually whisk in the milk, stirring continuously to avoid lumps. Stir the milk and roux into the ground beef until everything is well combined.

Step 4: Season and Simmer

  1. Add salt, pepper, garlic powder, and onion powder (if using) to taste. Keep stirring until the mixture thickens into a creamy sauce, about 5-7 minutes. Adjust the seasoning as needed.

Step 5: Serve

  1. Once the creamed beef is thick and creamy, remove it from the heat.
  2. Serve the creamed beef over slices of toasted bread or warm biscuits.

Tips:

  • For extra flavor, you can add a splash of Worcestershire sauce or a pinch of paprika.
  • Chipped beef can be used instead of ground beef for a more traditional take.
  • Serve with a side of scrambled eggs or a simple green salad for a full meal.
