It sounds like you’re in the mood for a cozy soup! Here’s a simple, hearty Classic Chicken Soup recipe that’s warm and comforting—perfect for any day.

Ingredients:

  • 1 tablespoon olive oil or butter
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 ½ cups cooked chicken (shredded or diced, can use rotisserie)
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 ½ cups egg noodles or any pasta of your choice (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the Vegetables:

    • Heat olive oil or butter in a large pot over medium heat.
    • Add the chopped onion, carrots, and celery, and sauté for about 5-7 minutes, or until the vegetables are softened and the onions are translucent.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add the Chicken and Broth:

    • Stir in the cooked chicken, then pour in the chicken broth.
    • Add the thyme, bay leaf, salt, and pepper, and bring the soup to a boil.
  3. Simmer the Soup:

    • Once the soup is boiling, reduce the heat and let it simmer for 20-25 minutes, allowing the flavors to meld together.
  4. Add the Noodles (Optional):

    • If you’re using noodles, add them to the soup during the last 10 minutes of simmering. Stir occasionally and cook until the noodles are tender.
  5. Taste and Adjust:

    • Taste the soup and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
  6. Serve:

    • Ladle the soup into bowls and garnish with chopped fresh parsley.
