Here’s a Sour Cream Blueberry Coffee Cake recipe that’s moist, flavorful, and perfect for breakfast or a sweet treat with your coffee!

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 ½ cups fresh blueberries (or frozen, but thawed and drained)

For the Streusel Topping:

  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, softened

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch round or square baking pan (or line with parchment paper).

2. Prepare the Streusel Topping:

  • In a small bowl, combine the sugar, flour, and cinnamon.
  • Add the softened butter and mix with a fork or pastry cutter until crumbly. Set aside.

3. Make the Cake Batter:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  • Beat in the eggs one at a time, adding the vanilla extract with the second egg.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, mixing just until combined.
  • Gently fold in the blueberries, being careful not to break them up too much.

4. Assemble the Cake:

  • Pour the batter into the prepared pan and spread it out evenly.
  • Sprinkle the streusel topping generously over the batter.

5. Bake:

  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
  • If the top begins to brown too quickly, loosely cover the cake with aluminum foil and continue baking.

6. Cool and Serve:

  • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve as is, or with a light dusting of powdered sugar on top for extra sweetness.
