Posted on January 26, 2024

Making Sourdough Discard Pumpkin Spice Toast Crunch is a creative way to utilize sourdough discard and infuse it with seasonal flavors. Here’s a recipe for you to try:

Ingredients:

  • For the Sourdough Discard Pumpkin Spice Toast Crunch:
    • 1 cup sourdough discard (unfed)
    • 1/2 cup pumpkin puree
    • 1/4 cup maple syrup or honey
    • 1 teaspoon vanilla extract
    • 1 teaspoon pumpkin spice blend (or a mix of cinnamon, nutmeg, ginger, and cloves)
    • Pinch of salt
    • 4 cups old-fashioned oats
    • 1/2 cup chopped nuts (such as pecans or walnuts) (optional)
    • 1/2 cup dried cranberries or raisins (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Sourdough Mixture:
    • In a large mixing bowl, combine the sourdough discard, pumpkin puree, maple syrup (or honey), vanilla extract, pumpkin spice blend, and a pinch of salt. Mix until well combined.
  3. Add the Oats and Mix-ins:
    • Add the old-fashioned oats to the sourdough mixture. Stir until the oats are evenly coated.
    • If using, add the chopped nuts and dried cranberries or raisins. Mix until they are distributed throughout the mixture.
  4. Spread onto Baking Sheet:
    • Spread the mixture evenly onto the prepared baking sheet.
  5. Bake:
    • Bake in the preheated oven for 30-40 minutes, stirring every 10-15 minutes, until the granola is golden brown and crispy.
  6. Cool:
    • Allow the Sourdough Discard Pumpkin Spice Toast Crunch to cool completely on the baking sheet. It will continue to crisp up as it cools.
  7. Serve or Store:
    • Once cooled, you can serve the pumpkin spice toast crunch immediately as a snack or breakfast cereal.
    • Store any leftovers in an airtight container at room temperature for up to 2 weeks.

Tips:

  • Feel free to customize the mix-ins based on your preferences. You can add dried fruits like chopped apricots, figs, or cherries, as well as seeds like pumpkin seeds or sunflower seeds.
  • Adjust the sweetness according to your taste preferences by adding more or less maple syrup or honey.
  • Serve the Sourdough Discard Pumpkin Spice Toast Crunch with yogurt, milk, or as a topping for ice cream or smoothie bowls.

Enjoy your homemade Sourdough Discard Pumpkin Spice Toast Crunch!
