Here’s a recipe for a tasty Spinach and Green Onion Pan Flatbread:
Ingredients:
- 2 cups all-purpose flour (plus extra for dusting)
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup warm water (plus more as needed)
- 2 tablespoons olive oil (plus extra for cooking)
- 1 cup fresh spinach, chopped
- 3-4 green onions, finely chopped
- 1 clove garlic, minced (optional)
- Salt and pepper to taste
Instructions:
- Prepare the Dough:
- In a large bowl, mix the flour, salt, and baking powder.
- Add the warm water and olive oil to the dry ingredients. Mix until a dough forms. If the dough is too dry, add a bit more water, 1 tablespoon at a time.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- Prepare the Filling:
- In a pan, heat a tablespoon of olive oil over medium heat.
- Add the chopped spinach and green onions (and garlic, if using). Sauté for 2-3 minutes until the spinach is wilted and the green onions are softened. Season with salt and pepper to taste.
- Remove from heat and let the mixture cool slightly.
- Assemble the Flatbread:
- Divide the dough into 4 equal portions. Roll each portion into a ball.
- On a lightly floured surface, roll out one ball of dough into a circle (about 8 inches in diameter).
- Spread a portion of the spinach and green onion mixture evenly over half of the circle.
- Fold the other half of the dough over the filling and press the edges together to seal.
- Repeat with the remaining dough and filling.
- Cook the Flatbread:
- Heat a non-stick skillet or a griddle over medium heat.
- Lightly brush the skillet with olive oil.
- Place the prepared flatbread in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Repeat with the remaining flatbreads, adding more oil to the skillet as needed.
- Serve:
- Slice the flatbread and serve warm with your favorite dipping sauce or as a side to a meal.
Tips:
- You can add some crumbled feta cheese or grated mozzarella to the filling for extra flavor.
- Serve these flatbreads with a side of yogurt dip or tzatziki for a complete meal.
