Spinach and Green Onion Pan Flatbread

Here’s a recipe for a tasty Spinach and Green Onion Pan Flatbread:

Ingredients:

  • 2 cups all-purpose flour (plus extra for dusting)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup warm water (plus more as needed)
  • 2 tablespoons olive oil (plus extra for cooking)
  • 1 cup fresh spinach, chopped
  • 3-4 green onions, finely chopped
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dough:
    • In a large bowl, mix the flour, salt, and baking powder.
    • Add the warm water and olive oil to the dry ingredients. Mix until a dough forms. If the dough is too dry, add a bit more water, 1 tablespoon at a time.
    • Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
    • Cover the dough with a damp cloth and let it rest for 15 minutes.
  2. Prepare the Filling:
    • In a pan, heat a tablespoon of olive oil over medium heat.
    • Add the chopped spinach and green onions (and garlic, if using). Sauté for 2-3 minutes until the spinach is wilted and the green onions are softened. Season with salt and pepper to taste.
    • Remove from heat and let the mixture cool slightly.
  3. Assemble the Flatbread:
    • Divide the dough into 4 equal portions. Roll each portion into a ball.
    • On a lightly floured surface, roll out one ball of dough into a circle (about 8 inches in diameter).
    • Spread a portion of the spinach and green onion mixture evenly over half of the circle.
    • Fold the other half of the dough over the filling and press the edges together to seal.
    • Repeat with the remaining dough and filling.
  4. Cook the Flatbread:
    • Heat a non-stick skillet or a griddle over medium heat.
    • Lightly brush the skillet with olive oil.
    • Place the prepared flatbread in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.
    • Repeat with the remaining flatbreads, adding more oil to the skillet as needed.
  5. Serve:
    • Slice the flatbread and serve warm with your favorite dipping sauce or as a side to a meal.

Tips:

  • You can add some crumbled feta cheese or grated mozzarella to the filling for extra flavor.
  • Serve these flatbreads with a side of yogurt dip or tzatziki for a complete meal.
