🧂 Ingredients (Serves 4)

For the Bowl:

  • 1–1½ lbs flank steak, sirloin, or skirt steak

  • 1 tbsp olive oil

  • Salt, pepper, and optional chili powder or cumin

  • 2 ears fresh corn, shucked (or 1½ cups frozen roasted corn)

  • 1 avocado, sliced

  • 1 cup cherry tomatoes, halved

  • 1 cup cooked rice or quinoa

  • ½ small red onion, thinly sliced

  • Optional: cotija cheese, lime wedges, chopped cilantro


🥣 For the Cilantro Cream Sauce:

  • ½ cup sour cream or Greek yogurt

  • 1 cup fresh cilantro leaves, packed

  • 1 clove garlic

  • Juice of 1 lime

  • 1 tbsp olive oil

  • Salt to taste

  • Optional: 1–2 tbsp jalapeño (for heat) or avocado (for extra creaminess)


👩‍🍳 Instructions

1. Prep and Cook the Steak:

  • Rub steak with olive oil, salt, pepper, and your chosen spices.

  • Grill or pan-sear over medium-high heat for about 4–5 minutes per side (medium-rare), or until desired doneness.

  • Let rest 5 minutes, then slice thinly against the grain.

2. Roast the Corn:

  • If using fresh corn: grill, broil, or pan-roast until lightly charred. Cut kernels off the cob.

  • For frozen: sauté in a dry skillet until browned and roasted.

3. Make the Cilantro Cream Sauce:

  • Blend all sauce ingredients in a food processor or blender until smooth and creamy. Adjust seasoning to taste.

4. Assemble the Bowls:

  • Start with a base of rice or quinoa.

  • Add sliced steak, roasted corn, avocado, tomatoes, and onion.

  • Drizzle with cilantro cream sauce and top with crumbled cotija, extra cilantro, or lime juice.

  • Swap the base: Try cauliflower rice, mixed greens, or farro

  • Make it spicy: Add pickled jalapeños or chipotle in adobo to the sauce
