Strawberry Crunch Cheesecake Cones

Strawberry crunch cheesecake cones are a delightful dessert that combines the creamy goodness of cheesecake with the sweet and fruity flavors of strawberries. They are usually served in a crispy sugar cone for added texture and fun. Here’s a simple recipe to make these delicious treats:

Ingredients:

For the Cheesecake Filling:

  • 8 oz (1 cup) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, hulled and diced

For the Strawberry Crunch Topping:

  • 1 cup crushed graham crackers or digestive biscuits
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 cup fresh strawberries, hulled and diced

For Serving:

  • Sugar ice cream cones

Instructions:

  1. In a mixing bowl, beat the softened cream cheese with an electric mixer until it’s smooth and creamy.
  2. Add the granulated sugar and vanilla extract to the cream cheese. Mix until well combined.
  3. In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until well combined. Be careful not to deflate the whipped cream.
  5. Gently fold in the diced strawberries.
  6. In another bowl, combine the crushed graham crackers, melted butter, and granulated sugar to make the strawberry crunch topping.
  7. Gently fold in the diced strawberries into the strawberry crunch mixture.
  8. To assemble the cheesecake cones, spoon the cheesecake filling into each sugar ice cream cone, filling them almost to the top.
  9. Sprinkle the strawberry crunch topping over the cheesecake filling in the cones.
  10. Place the filled cones in the freezer for about 2-3 hours, or until they are firm.
  11. Before serving, you can add a fresh strawberry slice or a drizzle of strawberry sauce on top for an extra burst of strawberry flavor.
