Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 8 slices Tuscany roasted bacon (or any thick-cut bacon)
  • Filling of your choice (options below)

Filling Options:

Option 1: Spinach and Cheese Filling

  • 1 cup chopped spinach (fresh or thawed frozen)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste

Option 2: Sun-Dried Tomato and Basil Filling

  • 1/2 cup chopped sun-dried tomatoes (drained if packed in oil)
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup shredded mozzarella cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven:
    • Preheat the oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Place each chicken breast between two sheets of plastic wrap and gently pound them to an even thickness. Season each breast with salt and pepper.
  3. Prepare the Filling:
    • For either filling option, mix the respective ingredients together in a bowl.
  4. Stuff the Chicken:
    • Spoon the filling mixture onto each chicken breast, dividing it evenly among them.
    • Roll up each chicken breast, enclosing the filling, and secure with toothpicks if needed.
  5. Wrap with Bacon:
    • Wrap two slices of Tuscany roasted bacon around each stuffed chicken breast, securing the ends with toothpicks to hold the bacon in place.
  6. Sear and Bake:
    • Heat an oven-safe skillet over medium-high heat. Place the bacon-wrapped chicken breasts seam-side down into the skillet and sear for a few minutes until the bacon starts to brown.
    • Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through and the bacon is crispy.
  7. Rest and Serve:
    • Remove the bacon-wrapped stuffed chicken breasts from the oven and let them rest for a few minutes before serving.
    • Remove the toothpicks before serving.
  8. Enjoy:
