STUFFED CHICKEN CHEESE MASALA

Certainly! Stuffed Chicken Cheese Marsala is a delightful dish that combines the rich flavors of chicken, cheese, and Marsala wine. Here’s a recipe for you:Ingredients:

For the Stuffed Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Olive oil for brushing

For the Marsala Sauce:

  • 2 tablespoons olive oil
  • 8 oz (about 1 cup) cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Butterfly the chicken breasts by cutting them horizontally, leaving one edge intact. Open the chicken breasts like a book.
    • Season the inside of each chicken breast with salt and pepper.
  3. Make the Cheese Filling:
    • In a bowl, mix together shredded mozzarella, Parmesan, chopped parsley, minced garlic, and dried oregano.
  4. Stuff the Chicken:
    • Divide the cheese mixture evenly among the chicken breasts, placing it on one side. Fold the other side over the filling, securing with toothpicks if needed.
  5. Sear the Chicken:
    • In an oven-safe skillet, heat olive oil over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  6. Bake the Chicken:
    • Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Prepare the Marsala Sauce:
    • In a separate skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until they release their moisture and become golden brown.
    • Add minced garlic and sauté for another 1-2 minutes.
    • Pour in Marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Simmer for about 10 minutes to reduce the sauce.
    • Stir in butter until melted, and season with salt and pepper to taste.
  8. Serve:
    • Remove toothpicks from the stuffed chicken breasts. Spoon the Marsala sauce over the chicken, and garnish with chopped fresh parsley.
