Stuffed Meatloaf on the Stovetop

Certainly! Here’s a recipe for a delicious stuffed meatloaf cooked on the stovetop:

Ingredients:

For the meatloaf:

  • 1 1/2 pounds ground beef (you can also use a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

For the stuffing:

  • 1 cup spinach, chopped
  • 1 cup mushrooms, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

For cooking:

  • 2 tablespoons olive oil
  • Tomato sauce or ketchup (optional)

Instructions:

  1. In a bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix everything together until well combined. Set this mixture aside.
  2. In another bowl, mix together the chopped spinach, mushrooms, shredded mozzarella cheese, salt, and pepper. This will be the stuffing for the meatloaf.
  3. Take half of the meat mixture and press it into a flat rectangle shape on a sheet of plastic wrap or parchment paper, creating a base for the stuffing.
  4. Spread the prepared stuffing mixture evenly over the meat rectangle, leaving a border around the edges.
  5. Carefully lift the edges of the plastic wrap or parchment paper and roll the meat over the stuffing, forming a log shape. Press the edges to seal and shape it into a loaf.
  6. Heat olive oil in a large skillet or frying pan over medium heat. Carefully transfer the stuffed meatloaf into the pan.
  7. Cook the meatloaf on all sides until it’s nicely browned, turning it gently to ensure even cooking. This may take about 15-20 minutes.
  8. Once browned on all sides, reduce the heat to low, cover the pan, and let the meatloaf continue to cook for another 20-25 minutes until it’s cooked through. You can check for doneness by using a meat thermometer—it should read 160°F (71°C) when inserted into the center of the meatloaf.
  9. Optionally, you can spread some tomato sauce or ketchup over the top of the meatloaf during the last few minutes of cooking for added flavor.
  10. Once done, remove the meatloaf from the pan and let it rest for a few minutes before slicing.

Slice the stuffed meatloaf and serve it warm. Enjoy your flavorful stovetop stuffed meatloaf!
