Ingredients:
- 1 cup rolled oats (use gluten-free oats if necessary)
- 1/2 cup natural peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/4 cup unsweetened shredded coconut
- 1/4 cup ground flaxseed or chia seeds
- 1/4 cup mini chocolate chips or cocoa nibs (optional)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- In a large mixing bowl, combine the rolled oats, peanut butter or almond butter, honey or maple syrup, shredded coconut, ground flaxseed or chia seeds, chocolate chips or cocoa nibs (if using), vanilla extract, and a pinch of salt.
- Stir all the ingredients together until well combined. If the mixture seems too dry, you can add a little more peanut butter or almond butter to help bind everything together.
- Once the mixture is well combined, cover the bowl and refrigerate it for about 30 minutes to allow it to firm up slightly.
- After chilling, remove the mixture from the refrigerator. Using clean hands, roll the mixture into small bite-sized balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper. Once you’ve rolled all the mixture into balls, you can optionally roll them in additional shredded coconut, cocoa powder, or chopped nuts for extra flavor and texture.
- Once all the energy bites are rolled and coated, return them to the refrigerator to chill for another 30 minutes to set.
- Once chilled and set, transfer the energy bites to an airtight container for storage. They can be kept in the refrigerator for up to two weeks, or you can store them in the freezer for longer-term storage.
