Sweet Alabama Pecan Bread Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream (or buttermilk for a tangier taste)
  • 1/2 cup chopped pecans (toasted, if preferred for more flavor)
  • 1/2 cup chopped pecans (for topping)
  • 1/2 cup milk (whole or 2% works best)
  • 1/4 cup light corn syrup or honey (optional, for a sweet, extra moist texture)

Instructions:

  1. Preheat and Prepare:

    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Mix the Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. Cream the Butter and Sugar:

    • In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 3-4 minutes using an electric mixer or a stand mixer. This will help make the bread light and airy.

    • If the top begins to brown too quickly, you can loosely cover the bread with aluminum foil for the last 15-20 minutes of baking.
