TACO RICE

Here’s a quick and delicious recipe for Taco Rice—a flavorful, easy-to-make dish that’s perfect as a side or even as a main meal. It combines the savory goodness of taco-seasoned rice with the classic flavors of Mexican cuisine.

Taco Rice

Ingredients:

  • 1 cup long-grain white rice (or brown rice, if preferred)
  • 2 cups water or chicken broth (for more flavor)
  • 1 tablespoon olive oil or butter
  • 1 packet taco seasoning mix (or homemade taco seasoning)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)
  • 1/2 cup corn kernels (optional)
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • Fresh cilantro (for garnish, optional)

Instructions:

  1. Cook the Rice:

    • In a medium saucepan, bring the 2 cups of water (or chicken broth) to a boil.
    • Stir in the rice and a pinch of salt. Reduce the heat to low, cover, and cook the rice for about 15-18 minutes (check package instructions for your rice type) until the water is absorbed and the rice is tender.
    • Once done, fluff the rice with a fork and set it aside.
  2. Sauté the Vegetables:

    • While the rice is cooking, heat the olive oil or butter in a large skillet over medium heat.
    • Add the diced onion and bell pepper (if using). Sauté for 3-5 minutes until softened and slightly caramelized.
  3. Add Taco Seasoning:

    • Stir in the taco seasoning mix with about 1/4 cup of water (or as directed on the seasoning packet). Stir until everything is well combined and heated through.
    • If you’re adding corn, toss it into the skillet now and cook for another 2-3 minutes until warmed.
  4. Combine Rice and Taco Seasoning:

    • Add the cooked rice to the skillet with the taco seasoning mixture. Stir until the rice is fully coated and heated through.
    • Squeeze in the lime juice and season with salt and pepper to taste. Mix well.
  5. Optional Toppings:

    • If desired, top the taco rice with shredded cheddar cheese and let it melt in the skillet for a couple of minutes.
    • Garnish with fresh cilantro for extra flavor and color.
  6. Serve:

    • Serve the taco rice as a side dish or as a base for tacos, burrito bowls, or even as a standalone meal.

Serving Suggestions:

  • Serve taco rice with your favorite protein, like seasoned ground beef, chicken, or beans, for a complete meal.
  • Add toppings like sour cream, salsa, avocado, or guacamole to enhance the flavors.
