Tacos Gobernador are a delicious Mexican dish, originating from Sinaloa, that features shrimp cooked with cheese, usually melted, and served in soft corn tortillas. The combination of savory shrimp, gooey cheese, and the slightly smoky flavor of grilled tortillas makes these tacos a real treat. Here’s how to make Tacos Gobernador at home:

Ingredients:

  • 1 lb shrimp, peeled, deveined, and chopped (medium to large shrimp work best)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 teaspoon ground cumin (optional)
  • 1/2 cup tequila (optional, for extra flavor)
  • 1 cup shredded Oaxaca cheese (or mozzarella if Oaxaca is unavailable)
  • 12 small corn tortillas
  • Lime wedges, for serving
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for cooking the tortillas)

Instructions:

1. Cook the shrimp:

  • Heat the butter and olive oil in a large skillet over medium-high heat.
  • Add the chopped onion and red bell pepper. Sauté for about 3-4 minutes until softened.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the chopped shrimp to the skillet. Season with salt, pepper, and cumin (if using). Cook for about 3-4 minutes until the shrimp turn pink and are fully cooked through.
  • If using, pour in the tequila, letting it cook off and infuse the shrimp mixture with extra flavor for about 1 minute.
  • Remove the shrimp from heat and stir in the fresh chopped cilantro.

2. Melt the cheese:

  • Add the shredded Oaxaca cheese to the shrimp mixture and stir to combine. Let it sit for a minute or two to allow the cheese to melt into the shrimp and vegetables. The cheese should become gooey and coat the shrimp.

3. Prepare the tortillas:

  • Heat a separate skillet or griddle over medium heat. Lightly brush the tortillas with olive oil and heat them on both sides for 1-2 minutes each, until they are warm and slightly crispy but still soft. Alternatively, you can heat the tortillas directly over a gas flame for a more charred flavor.

4. Assemble the tacos:

  • Spoon the shrimp and cheese mixture into each warm tortilla.
  • Serve the tacos immediately with a side of lime wedges for squeezing over the top.

5. Optional toppings:

  • You can top the tacos with additional fresh cilantro, avocado slices, salsa, or a drizzle of crema (Mexican sour cream) for extra flavor.

Serving Suggestions:

Tacos Gobernador are perfect as a main dish for lunch or dinner. They pair well with a cold Mexican beer or margarita. You can also serve them alongside a simple salad, rice, or some grilled vegetables for a complete meal.
