Thai-Inspired Avocado Salad

This Thai-inspired avocado salad combines the creaminess of avocado with fresh vegetables and a zesty, tangy dressing. It’s a light, refreshing dish that’s perfect for a healthy lunch or side dish.

Ingredients:

  • For the Salad:
    • 2 ripe avocados, diced
    • 1 cucumber, thinly sliced
    • 1 red bell pepper, thinly sliced
    • 1 carrot, julienned or shredded
    • 1 small red onion, thinly sliced
    • 1/2 cup cherry tomatoes, halved
    • 1/4 cup fresh cilantro, chopped
    • 1/4 cup fresh mint leaves, chopped
    • 1/4 cup chopped peanuts or cashews (optional)
  • For the Dressing:
    • 3 tablespoons lime juice (about 1-2 limes)
    • 2 tablespoons fish sauce (or soy sauce for a vegetarian option)
    • 1 tablespoon rice vinegar
    • 1 tablespoon honey or maple syrup
    • 1 clove garlic, minced
    • 1 teaspoon grated ginger
    • 1 small red chili, finely chopped (optional, for heat)

Instructions:

  1. Prepare the Vegetables:
    • In a large salad bowl, combine the diced avocado, cucumber slices, red bell pepper slices, julienned carrot, red onion slices, cherry tomatoes, chopped cilantro, and chopped mint.
  2. Make the Dressing:
    • In a small bowl, whisk together the lime juice, fish sauce (or soy sauce), rice vinegar, honey or maple syrup, minced garlic, grated ginger, and finely chopped red chili (if using).
  3. Toss the Salad:
    • Pour the dressing over the salad ingredients and gently toss to combine, ensuring all the vegetables and avocado are well coated.
  4. Add Nuts:
    • If desired, sprinkle the chopped peanuts or cashews over the top of the salad for added crunch and flavor.
  5. Serve:
    • Serve the salad immediately as a refreshing appetizer or side dish.

Tips:

  • Avocado: Use ripe but firm avocados to ensure they hold their shape in the salad.
  • Variations: Feel free to add other vegetables like shredded cabbage, snap peas, or radishes for extra crunch and color.
  • Protein: Add grilled shrimp, chicken, or tofu for a more substantial meal.
