Garlic Butter Chicken with Parmesan Rice

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

For the Parmesan Rice:

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, paprika, and garlic powder.
  2. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, reduce the heat to medium. Add the butter and minced garlic. Sauté for about 1 minute until the garlic is fragrant.
    • Add the chicken broth and lemon juice to the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.
    • Return the chicken to the skillet, spooning the garlic butter sauce over the top. Let it cook for another 2-3 minutes to heat through and absorb the flavors.
  4. Prepare the Parmesan Rice:
    • While the chicken is cooking, rinse the rice under cold water until the water runs clear.
    • In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
    • Remove from heat and stir in the grated Parmesan cheese and butter. Season with salt and pepper to taste.
  5. Serve:
    • Plate the Parmesan rice and top with the garlic butter chicken.
    • Garnish with chopped fresh parsley if desired.
