The Greatest Queso That Ever Lived

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 small onion, finely diced
  • 1-2 jalapeños, seeds removed and diced (adjust for spice level)
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel diced tomatoes with green chilies (drained)
  • 1 cup whole milk (or heavy cream for extra creaminess)
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika (smoked paprika works great here)
  • 1/4 teaspoon chili powder (optional, for extra depth)
  • Salt and pepper, to taste
  • Cilantro, chopped (optional, for garnish)
  • Tortilla chips, for serving

Instructions:

  1. Sauté the Veggies:

    • In a medium saucepan or skillet, melt the butter over medium heat.
    • Add the onion and jalapeños. Sauté for about 3-4 minutes, until softened and fragrant.
    • Add the garlic and sauté for another 1 minute until it becomes fragrant.
  2. Add the Tomatoes and Spices:

    • Add the Rotel diced tomatoes (drained) to the pan, along with the cumin, paprika, and chili powder (if using). Stir everything together and let it simmer for 2-3 minutes to meld the flavors.
  3. Make the Cheese Sauce:

    • Lower the heat and add the cream cheese, stirring until it melts and becomes smooth.
    • Slowly add the milk while continuing to stir, making sure everything is evenly incorporated.
  4. Add the Cheeses:

    • Gradually add the cheddar cheese and Monterey Jack cheese to the mixture, stirring constantly until the cheese is fully melted and the queso becomes creamy.
  5. Season and Adjust:

    • Taste the queso and adjust with salt and pepper to your liking. If you want it spicier, you can add a bit more jalapeño or chili powder.
  6. Serve:

    • Once the queso is smooth and creamy, remove from heat and transfer to a serving dish.
    • Garnish with freshly chopped cilantro (optional), and serve with tortilla chips or your favorite dipping items like veggies, nachos, or even soft pretzels.

Serving Suggestions:

  • You can also serve this queso as a topping for nachos, burritos, or tacos.
  • If you’re feeling adventurous, try adding cooked ground beef, chicken, or chorizo to make it even heartier.

This queso is rich, flavorful, and has just the right balance of creaminess and heat, making it The Greatest Queso That Ever Lived! It’s perfect for game days, parties, or just a cozy night in. Enjoy!
