Twice Baked Potato Casserole With Bacon

Twice baked potato casserole with bacon is a delicious and indulgent side dish that combines the flavors of creamy mashed potatoes, cheese, and crispy bacon. Here’s a recipe to make this delightful casserole:Ingredients:

For the Mashed Potatoes:

  • 6 large russet potatoes
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter
  • 1/2 cup whole milk
  • Salt and black pepper, to taste

For the Topping:

  • 6 slices of bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 3 green onions, chopped
  • 1/4 cup chopped fresh chives (optional)
  • Salt and black pepper, to taste

Instructions:

For the Mashed Potatoes:

  1. Preheat your oven to 350°F (175°C).
  2. Wash and scrub the potatoes, then pierce them with a fork a few times.
  3. Bake the potatoes directly on the oven rack for about 60 minutes, or until they are tender when pierced with a fork.
  4. Remove the potatoes from the oven and let them cool slightly.
  5. Cut the potatoes in half and scoop out the flesh into a large mixing bowl, leaving a thin shell.
  6. Add the sour cream, unsalted butter, and whole milk to the potato flesh. Mash and mix until you have smooth and creamy mashed potatoes. Season with salt and black pepper to taste.

For the Topping:

  1. In a separate bowl, combine the crumbled bacon, shredded cheddar cheese, chopped green onions, and chopped fresh chives (if using).

Assembly:

  1. Spread the mashed potatoes evenly in a greased 9×13-inch baking dish.
  2. Sprinkle the bacon, cheese, green onions, and chives mixture over the mashed potatoes.
  3. Season with additional salt and black pepper, if desired.
  4. Bake the casserole in the preheated oven for about 25-30 minutes, or until the topping is golden and bubbly.
  5. Remove the casserole from the oven and let it cool for a few minutes before serving.
