Low-Carb, Sugar-Free Wet Burritos

Ingredients:

For the Burrito Filling:

  • 1 lb ground beef or turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning (look for a low-carb, sugar-free option or make your own)
  • Salt and pepper to taste

For the Burrito Sauce:

  • 1 cup tomato sauce (check for no added sugar)
  • 1 cup beef or chicken broth (preferably low-sodium)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For Assembly:

  • Large lettuce leaves or low-carb tortillas (look for options with fewer carbs)
  • Shredded cheese
  • Sour cream
  • Chopped tomatoes
  • Avocado slices
  • Fresh cilantro, chopped

Instructions:

  1. Cook the Filling:
    • In a skillet, heat olive oil over medium heat.
    • Add chopped onions and cook until softened.
    • Add minced garlic and diced bell pepper, and cook for a few minutes until the vegetables are tender.
    • Add ground beef or turkey, breaking it apart with a spoon, and cook until browned.
    • Stir in taco seasoning, salt, and pepper. Cook for an additional 2-3 minutes. Set aside.
  2. Prepare the Burrito Sauce:
    • In a saucepan, combine tomato sauce, broth, chili powder, cumin, garlic powder, salt, and pepper.
    • Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld. Adjust seasoning as needed.
  3. Assemble the Wet Burritos:
    • Preheat the oven to 375°F (190°C).
    • Lay out the lettuce leaves or low-carb tortillas.
    • Divide the cooked filling among the lettuce leaves or tortillas.
    • Roll them up and place them in a baking dish.
    • Pour the prepared burrito sauce over the rolled burritos.
    • Top with shredded cheese.
    • Bake in the oven for about 15-20 minutes or until the cheese is melted and bubbly.
  4. Serve:
    • Remove from the oven and let it cool slightly.
    • Serve the wet burritos with a dollop of sour cream, chopped tomatoes, avocado slices, and fresh cilantro.
