White Chicken Chili

Here’s a recipe for White Chicken Chili:Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño pepper, seeded and diced
  • 1 lb (about 450g) boneless, skinless chicken breasts, diced
  • 2 cans (15 oz each) white beans (such as cannellini or great northern beans), drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 1 cup frozen corn kernels
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Optional toppings: shredded cheese, sour cream, sliced avocado, chopped green onions, tortilla strips

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced jalapeño pepper. Cook until the vegetables are softened, about 5-7 minutes.
  2. Add the diced chicken breasts to the pot. Cook, stirring occasionally, until the chicken is no longer pink, about 5-7 minutes.
  3. Stir in the drained and rinsed white beans, chicken broth, ground cumin, dried oregano, ground coriander, cayenne pepper (if using), salt, and pepper.
  4. Bring the chili to a simmer and let it cook for about 20-25 minutes, stirring occasionally, to allow the flavors to meld together and the chili to thicken slightly.
  5. Add the frozen corn kernels to the chili and cook for an additional 5 minutes.
  6. Stir in the chopped fresh cilantro and lime juice. Taste the chili and adjust the seasoning with more salt, pepper, or lime juice if necessary.
  7. Serve the White Chicken Chili hot, garnished with your choice of toppings such as shredded cheese, sour cream, sliced avocado, chopped green onions, or tortilla strips.
